Ember released their global electricity report today
This has openly licensed country-level data on power generation and carbon intensity of electricity, from 2021 all the way back to 2000, that is nice and easy to download, and explore here:

To note that I have just contacted Ember about migrating to CC‑BY‑4.0 licensing for data instead of CC‑BY‑SA‑4.0 as indicated. Very few practitioners recommend share‑alike licensing for data in this context. That said, there are corner cases like OpenStreetMap which seeks to protect its integrity over reusability. R
